International Workshop “Fermented Food Ecosystems”

(English follows)

Dear all,
We are pleased to announce the international interdisciplinary workshop “Fermented Food Ecosystems.”
Fermented foods are made through the activities of microorganisms such as yeasts and bacteria. Yet understanding traditional fermented foods also requires considering their connections with plants, animals such as insects, people, and the environment.
Using enset, a staple crop that has long been cultivated in southwestern Ethiopia, and its fermented foods as a starting point, this workshop explores “fermented food ecosystems” by considering the interactions among these diverse elements and seeks new possibilities for interdisciplinary research. Researchers from Ethiopia and Japan will give talks spanning ecology, life sciences, food science, and cultural anthropology. Posters by students and early-career researchers, along with networking sessions, will encourage interdisciplinary discussion and exchange.
We welcome participants from all disciplines.
